- 5 lb. yellow squash, sliced
- 1 c. onions, diced
- 1 c. fresh tomatoes, diced and drained
- 1 c. cubed American cheese
- 3/4 c. bread crumbs
- 1 stick margarine
Directions

1Cook squash just until tender and drain.

2Saute onions in 1 stick of butter.

3Take onions out of pan with a slotted spoon and save butter.

4Using the butter from the onions, lightly brown the bread crumbs.

5Combine squash, onions, tomatoes and cheese in a casserole dish.

6Mix gently together.

7Top with browned bread crumbs.

8Bake at 350° for 1/2 hour, or until cheese is bubbly. Serves 6 to 8.
