Squash Medley

Ingredients

  • 5 lb. yellow squash, sliced
  • 1 c. onions, diced
  • 1 c. fresh tomatoes, diced and drained
  • 1 c. cubed American cheese
  • 3/4 c. bread crumbs
  • 1 stick margarine

Directions

    Cook squash just until tender and drain.

    Saute onions in 1 stick of butter.
  3. 3
    Take onions out of pan with a slotted spoon and save butter.

    Using the butter from the onions, lightly brown the bread crumbs.

    Combine squash, onions, tomatoes and cheese in a casserole dish.

    Mix gently together.

    Top with browned bread crumbs.

    Bake at 350° for 1/2 hour, or until cheese is bubbly. Serves 6 to 8.
