- 2 lb. squash (8 medium)
- 2 eggs
- 1 c. butter, melted
- 1 c. sugar
- 3 c. all-purpose flour
- 1 Tbsp. and 2 tsp. baking powder
- 1 tsp. salt
Directions

1Cut and wash squash.

2Cook squash in water for 15 to 20 minutes.

3Drain well and mash.

4Measure 2 cups and combine squash, eggs and butter and stir well.

5Set this aside.

6Combine remaining ingredients

7in a large bowl and make a well in the center.

8Add squash mixture, stirring just until moistened.

9Spoon into greased muffin pan 3/4 full.

10Bake at 375° for 20 minutes.
