Squash-Onion-Rice Casserole

Ingredients

  • 2 c. cooked squash
  • 2 c. cooked rice
  • 2 onions, chopped and cooked with squash
  • 4 Tbsp. margarine, melted
  • 4 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 c. milk
  • 6 oz. cream cheese, diced
  • 1 c. grated Cheddar cheese
  • 1 c. bread crumbs

Directions

    Mix flour with margarine.

    Add salt and pepper.

    Stir in milk. Cook over medium heat, stirring constantly, until thickened. Add cream cheese. Stir until smooth.

    Pour over squash, rice and onions.

    Fold together until mixed well.

    Put in a 9 x 13-inch casserole dish. Sprinkle with grated Cheddar cheese and bread crumbs.

    Bake 30 minutes at 350°.
