Squash-Onion-Rice Casserole

Ingredients
- 2 c. cooked squash
- 2 c. cooked rice
- 2 onions, chopped and cooked with squash
- 4 Tbsp. margarine, melted
- 4 Tbsp. flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 c. milk
- 6 oz. cream cheese, diced
- 1 c. grated Cheddar cheese
- 1 c. bread crumbs
Directions

1Mix flour with margarine.

2Add salt and pepper.

3Stir in milk. Cook over medium heat, stirring constantly, until thickened. Add cream cheese. Stir until smooth.

4Pour over squash, rice and onions.

5Fold together until mixed well.

6Put in a 9 x 13-inch casserole dish. Sprinkle with grated Cheddar cheese and bread crumbs.

7Bake 30 minutes at 350°.
