  • 2 c. grated, uncooked yellow squash
  • 2 tsp. grated onion
  • 1/2 tsp. salt
  • 1/4 c. plus 2 Tbsp. all-purpose flour
  • 2 eggs, beaten
  • 2 tsp. sugar
  • 1/8 tsp. pepper
  • 2 Tbsp. margarine

    Combine squash, onion, sugar, salt and pepper in a medium bowl.

    Cover and let stand 30 minutes. Drain thoroughly.

    Add flour and eggs.

    Stir well.

    Melt margarine in a large skillet over medium heat. Drop squash mixture by tablespoon into hot margarine. Cook until golden brown, turning once.
