  • 6 to 10 yellow squash grated
  • 1 medium onion
  • 1 1/2 Tbsp. salt
  • 1/2 c. self rising flour
  • 1/3 c. corn meal
  • salt (to taste)
  • pepper (to taste)
  • 1 egg
  • 1 c. grated cheddar cheese

Directions

    Place grated squash and onions in a colander and sprinkle with salt. Let stand in colander in sink until all moisture is gone. Add flour, cornmeal, black pepper, cheese, and egg - mix well.

    Form into patties and fry until golden brown.
