  • 6 squash, sliced thin
  • 1/2 c. onion, chopped
  • 1 c. cornmeal
  • 1 t. salt

Directions

    Boil squash until tender.

    Drain.

    Blend squash and onions. Mix with cornmeal and salt until thick.

    Roll into patties.

    Cover bottom of frying pan with oil.

    Cook on med. high heat, turning until both sides are brown.
