Ingredients

  • 5 lb. squash, thinly sliced
  • 3 medium onions
  • 1/2 c. salt
  • ice cubes
  • 3 c. sugar
  • 3 c. vinegar
  • 2 tsp. celery seed
  • 2 tsp. mustard seed
  • 1 1/2 tsp. turmeric
  • 1 tsp. ginger
  • 1/2 tsp. black pepper

Directions

    Combine squash, onions and salt in layers.

    Top with ice cubes; let stand for 3 hours.

    Drain and rinse in cold water. Combine squash mixture with other ingredients; heat to boiling point.

    Reduce heat and simmer for 2 minutes.

    Fill jars and seal. Process in hot water bath for 5 minutes.
