- 1 egg yolk
- 3/4 c. sugar
- 1 Tbsp. butter
- 1 1/2 c. steamed squash, mashed
- 3/4 c. rich milk or half and half
- 1/2 tsp. salt
- 1 Tbsp. cornstarch
- 1/2 tsp. vanilla
Directions

1Beat egg yolk well.

2Add sugar, butter, squash, milk, salt and cornstarch.

3Mix together and add vanilla.

4Over medium heat, bring mixture to a complete boil.

5Pour into baked pie crust. Spoon meringue on top and bake at 400° for 10 minutes, until brown.
