  • 1 egg yolk
  • 3/4 c. sugar
  • 1 Tbsp. butter
  • 1 1/2 c. steamed squash, mashed
  • 3/4 c. rich milk or half and half
  • 1/2 tsp. salt
  • 1 Tbsp. cornstarch
  • 1/2 tsp. vanilla

Directions

    Beat egg yolk well.

    Add sugar, butter, squash, milk, salt and cornstarch.

    Mix together and add vanilla.

    Over medium heat, bring mixture to a complete boil.

    Pour into baked pie crust. Spoon meringue on top and bake at 400° for 10 minutes, until brown.
