- 3/4 lb. diced yellow squash
- 1 egg, beaten
- 1/3 c. self-rising flour
- 1/3 c. self-rising cornmeal
- 1/4 tsp. salt
- 1 tsp. baking powder
- 1 medium onion, finely chopped
- cooking oil
Directions

1Cook squash covered in boiling water until tender; drain.

2Mash enough to fill one cup; save remainder.

3Combine the one cup mashed squash with eggs; stir well.

4Combine flour, cornmeal, baking powder and salt.

5Stir well.

6Add squash mixture; add onion.

7Stir well until blended.

8Drop mixture by tablespoon into hot oil until well browned.
