  • 12 c. squash, grated
  • 4 large bell peppers, grated
  • 5 Tbsp. salt
  • 4 large onions, grated
  • 2 small jars pimientos
  • 2 1/2 c. vinegar
  • 2 tsp. pickling spice*
  • 1 1/2 tsp. turmeric*
  • 5 c. sugar
  • 2 1/2 tsp. celery salt

Directions

    Mix squash, peppers, salt, onions and pimientos and let stand overnight.

    Next morning, drain and rinse.

    Mix the vinegar, pickling spice, turmeric, sugar and celery salt in a saucepan. Heat to a boil and boil for 10 minutes.

    Remove spices; mix squash mixture in and boil for 5 minutes.

    Put in hot jars and seal. Makes about 6 to 61/2 pints.
