Ingredients

  • 12 c. grated squash
  • 4 c. chopped onions
  • 2 c. bell pepper, chopped
  • 1 c. red hot pepper, chopped
  • 1 jar pimientos
  • 5 Tbsp. salt
  • 2 1/2 c. vinegar
  • 5 3/4 c. sugar
  • 2 Tbsp. pickle spice
  • 1 tsp. cumin
  • 2 1/2 tsp. celery seed

Directions

    Mix squash, onions, bell pepper, hot pepper, pimientos and salt together; let stand overnight in plastic container.

    Next morning, mix vinegar, sugar and pickle spice, cumin and celery seed tied in cloth.

    Put in pan and bring to a boil.

    Add mix to squash mixture and boil for 15 minutes.

    Put in hot jars and seal.

    Ready to eat. Makes 6 quarts.
