- 12 c. grated squash
- 4 c. chopped onions
- 2 c. bell pepper, chopped
- 1 c. red hot pepper, chopped
- 1 jar pimientos
- 5 Tbsp. salt
- 2 1/2 c. vinegar
- 5 3/4 c. sugar
- 2 Tbsp. pickle spice
- 1 tsp. cumin
- 2 1/2 tsp. celery seed
Directions

1Mix squash, onions, bell pepper, hot pepper, pimientos and salt together; let stand overnight in plastic container.

2Next morning, mix vinegar, sugar and pickle spice, cumin and celery seed tied in cloth.

3Put in pan and bring to a boil.

4Add mix to squash mixture and boil for 15 minutes.

5Put in hot jars and seal.

6Ready to eat. Makes 6 quarts.
