Squash Relish

Ingredients

  • 12 c. yellow squash, ground or grated
  • 4 c. chopped onions
  • 2 bell peppers, chopped
  • 5 Tbsp. canning salt
  • 2 1/2 c. white vinegar
  • 2 Tbsp. turmeric
  • 4 3/4 c. sugar
  • 2 Tbsp. celery seed
  • 2 Tbsp. pickling spice
  • 1 jar pimentos
  • 4 or 5 small hot peppers (if desired)

    Mix veggies together.

    Pour canning salt over veggies.

    Let stand overnight in refrigerator.

    Drain in colander and rinse under cold running water.

    Mix vinegar, turmeric, sugar, celery seed, pickling spice (tied in a cloth), pimentos and hot peppers. Add veggies and bring to a boil.

    Pour in jars and seal.
