Squash Relish

Ingredients

  • 6 large squash
  • 4 large onions
  • 2 green sweet peppers
  • 3 c. sugar
  • 2 1/2 c. vinegar
  • 2 tsp. turmeric
  • 2 tsp. celery seed

    Chop fine.

    Cover with ice water and ice.

    Add 1/2 cup salt. Let stand 1 hour.

    Drain.

    Rinse well under cold running water. Drain again and set aside.

    Boil sugar, vinegar, turmeric and celery seed for 5 minutes.

    Cool.

    Pour solution over squash mixture.

    Store in refrigerator.

    Will keep indefinitely.
