- 12 c. yellow squash, diced
- 2 green bell peppers, diced
- 2 Tbsp. pickling spice
- 2 1/2 c. sugar
- 4 c. onion, diced
- 2 red bell peppers, diced
- 3 tsp. salt
- 2 Tbsp. turmeric
- 2 1/2 c. apple cider vinegar
Directions

1Mix squash, onion and peppers.

2Let stand overnight.

3Add pickling spice, sugar, turmeric and vinegar.

4Cook until tender. Put in jars and seal.

5Makes approximately 7 pints.
