  • 1 butternut squah, cut into 1/2 inch pieces
  • 2 tablespoons olive oil
  • kosher salt
  • 1 tablespoon honey
  • 4 slices bread toasted
  • 1/2 cup ricotta

Directions

    Heat oven to 450. Toss squash, oil, salt, pepper on rimmed baking sheet and roast. Toss once until tender (16-18 minutes)

    Meanwhile, combine vinegar and honey in small pot over medium heat and cook, stirring occasionally, until syrupy (8-10 minutes). Let cool.

    Top the bread with ricotta and roasted squash. Drizzle the syrup
