- 1 butternut squah, cut into 1/2 inch pieces
- 2 tablespoons olive oil
- kosher salt
- 1 tablespoon honey
- 4 slices bread toasted
- 1/2 cup ricotta
Directions

1Heat oven to 450. Toss squash, oil, salt, pepper on rimmed baking sheet and roast. Toss once until tender (16-18 minutes)

2Meanwhile, combine vinegar and honey in small pot over medium heat and cook, stirring occasionally, until syrupy (8-10 minutes). Let cool.

3Top the bread with ricotta and roasted squash. Drizzle the syrup
