Squash Souffle

Ingredients

  • 2 or 3 squash
  • onion
  • 8 or 10 crackers or bread crumbs, crumbled
  • 1/4 c. butter or margarine
  • 2 eggs, separated (save whites)
  • 1 c. grated Cheddar cheese
  • 1/2 c. milk
  • salt and pepper to taste

Directions

    Cook until tender the squash and onion.

    Drain and mash.
  3. 3
    Mix all ingredients together and fold in beaten egg whites.

    Pour in buttered dish.

    Bake at 300° for 30 minutes.
