Ingredients
- 1/2 c. butter
- 2 Tbsp. vegetable oil
- 1 large onion, minced
- 1/2 tsp. garlic or 2 cloves
- 1 c. canned milk
- 3 lb. squash, sliced thin
- 3 1/2 to 4 c. chicken broth
- 1 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Saute garlic and onion in oil and butter until transparent. Add squash and chicken stock.

2Simmer until squash is tender. Transfer in batches to blender, adding a little milk to each batch.

3Blend until smooth.

4Stir in salt, pepper and onion. Should be thick.

5Garnish with parsley or sliced squash.
