- 2 1/2 lb. (1 medium) squash
Directions

1Look for good yellow/orange color; hard squash that is heavy. Wash squash.

2Pierce with tip of sharp knife in several places. Allows steam to escape.

3Place squash on paper towel in microwave. Microwave uncovered on High 18 to 23 minutes, turning over after 8 minutes, until tender when pierced with tip of sharp knife.

4Let stand uncovered 10 minutes.

5Cut crosswise in half; remove seeds and fibers.

6Scrape fork across squash to pull flesh into strands. Serve with spaghetti or clam cause or serve with sprinkled grated cheese.

7Yields 4 servings, 60 calories per serving.
