Ingredients
- 1 1/2 lb. fresh yellow squash
- 1 (2 oz.) jar chopped pimentos
- 1 small onion, chopped fine
- 1 c. sour cream
- 1 can cream of chicken soup
- 4 small grated carrots
- 4 c. cornbread or 1 pkg. cornbread stuffing
- 3/4 c. melted butter
Directions

1Cook squash in small amount of water until tender; drain and mash.

2Season to taste.

3Stir in remaining ingredients, reserving half the cornbread which has been mixed with the butter.

4Line a casserole with reserved cornbread.

5Set aside enough cornbread to sprinkle on top.

6Fill casserole with squash mixture; top with remaining cornbread.

7Bake for 30 minutes at 350°.

8May be prepared the day before and baked when needed.
