- 2 squirrels
- salt to taste
- pepper to taste
- flour to dredge
- 2 c. water
- 3 Tbsp. fat
Directions

1Cut squirrel into serving pieces and shake in a paper bag containing seasoned flour to dredge well.

2Fry in skillet until golden brown.

3Remove squirrel from skillet and pour off all grease except 2 teaspoons.

4Add water and bring to a boil.

5Return squirrel to skillet; turn on low heat, cover and cook for about 1 hour, until meat almost leaves bone.

6Turn squirrel occasionally and baste often.

7Serve with grits, hot biscuits and honey.
