  • 3 to 4 squirrels, dressed
  • salt and pepper
  • 1 bay leaf
  • flour
  • 4 Tbsp. margarine
  • garlic clove, sliced
  • cooked rice

Directions

    Cut each squirrel into 4 pieces.

    Place the pieces in a cooking pot and cover with water.

    Add salt, pepper and the bay leaf and cook until tender.

    Remove squirrel from the pot and roll each piece in flour.
  5. 5
    Bring the stock to a boil again and add the floured squirrel and the garlic.

    Add margarine and cook until thickened to a gravy.

    Serve over rice.
