- 4 Filet Mignon steaks (about 6 oz. each)
- salt and pepper to taste
- 2 Tbsp. olive oil
- 3 Tbsp. butter
- 3 Tbsp. chopped chives or shallots
- 2 Tbsp. cognac
- 3 Tbsp. chopped parsley
- 1 tsp. imported mustard
- 1/2 tsp. Worcestershire sauce
- 2 tsp. beef broth
Directions

1Place slices of filet on a flat surface.

2Pound with a flat mallet to about 1/4-inches thick.

3Sprinkle with salt and pepper. Heat 2 tablespoons of oil and 2 tablespoons of butter in large skillet.

4When very hot, add steaks.

5Cook about 1 1/2 minutes on one side; turn and cook about 30 seconds on the other side. Transfer to hot serving dish.
