- 1/4 c. dry white wine
- 3/4 c. cream
- 1/2 c. Roquefort cheese
- salt and pepper
- pinch of cayenne
- 2 to 4 seasoned steaks (T-bone)
Directions

1Sauce:

2Melt butter in saucepan.

3Add flour and whip until blended and bubbling.

4Do not brown.

5Add wine; continue to stir while boiling for 2 minutes.

6Slowly add cream; simmer 20 minutes. Add cheese and seasonings, barely returning to a boil, then remove from heat.
