- 2 cups dry white wine
- 1 cup fresh lemon juice
- 1 cup water
- 1 carrot, peeled and thinly sliced
- 2 ribs celery, thinly sliced
- 1 small onion, peeled and thinly sliced
- 2 sprigs fresh thyme
- 1/2 teaspoon black peppercorns
- 1 2-to-3-pound shad, scaled and cleaned, head and tail intact
Directions

1Preheat oven to 300 degrees.

2Combine all ingredients except shad in a steamer large enough to hold the fish.

3The liquid should barely reach the rack.

4If necessary, add equal proportions of wine and lemon juice until it does, but do not allow shad and liquid to meet.

5Place the fish on the rack.

6Cover tightly and steam for 5 hours.

7Serve immediately.
