  • Dry Ingredients:
  • 1 c. buckwheat (gluten-free) flour
  • 11/2 c. quick oats
  • 1 c. raisins
  • 1 c. frozen cranberries
  • 1 c. frozen blueberries
  • 2 tsp baking powder

  • 2 tsp cinnamon
  • 1 tsp each of mace & nutmeg
  • 1/2 tsp each of ginger, allspice, & cardamon
  • 1/4 tsp cloves
  • Wet Ingredients:
  • 2 oz. oil (olive or safflower)
  • 4 oz. honey
  • 4 oz. eggs or cholesterol-free egg product
  • 6 oz. soymilk or other non-dairy substitute
  • Topping:
  • 1 banana - sliced

    2. Grease & flour a 10-inch cast iron skillet

    3. Measure Dry Ingredients into 21/2 qt. mixing bowl, stir

    4. Measure Wet Ingredients into 2-cup Pyrex cup

    5. Pour Wet Ingredients into mixing bowl with Dry, mix

    6. Pour mass into cast iron skillet

    7. Top with sliced banana

    8. Bake for ~30 min. (test with cake-tester to ensure completely baked)
