Ingredients

  • 4 hard-boiled eggs, sliced
  • 2 tomatoes, sliced
  • 220 g tuna, drained
  • 1 tablespoon butter
  • 125 g mushrooms, sliced
  • 34 cup light sour cream
  • 2 eggs, beaten
  • 2 teaspoons soy sauce
  • 4 tablespoons parmesan cheese, grated
  • pepper, to taste

Directions

    Preheat oven to 190.C.

    Place sliced eggs, tomato and tuna in layers in a buttered casserole or ovenproof dish.

    Melt butter & saute mushrooms before adding to the casserole.

    Mix together all other ingredients except cheese and pour over the casserole, sprinkle with grated cheese.

    Cook in a moderately hot oven 190.C for 30-40 mins or until mixture is set.

    Turn up heat for last 5 mins to crisp to cheese top.

    Serve with rice or spaghetti.
