Ingredients

  • 450 g green capsicum, chopped
  • 200 g onions, diced
  • 250 chicken breasts, chopped
  • 100 g ham, chopped
  • 400 ml light coconut milk
  • 600 g pumpkin, pureed
  • 3 cups water
  • 1 cup chicken stock
  • 400 g tomatoes
  • 250 g lentils
  • 1 tablespoon curry paste
  • 1 tablespoon oil
  • 2 garlic cloves, diced

Directions

    Fry the capsicum, onion, garlic and ham with the oil and curry paste.

    Add the chicken and fry.

    Add the remaining ingredients and simmer for 20 minutes.

    Salt and pepper to taste.
