- 1 qt. string beans, freshly picked and washed
- salt to taste
- 1 tsp. sugar
- oil (to cover bottom of iron skillet)
- water
Directions

1Prepare fresh green beans by snapping into 1/2-inch pieces. Pour oil to cover bottom of iron skillet.

2Sprinkle about 1 teaspoon of sugar and salt (enough to season beans) over the oil in skillet.

3Heat over medium heat until sugar begins to dissolve and crystallize.

4Place beans in oil and cover with tight lid. Water in beans will cook out.

5If beans begin to fry, add small amount of water and stir to prevent browning.

6Takes about 30 minutes to cook tender.
