- 4 or 5 lb. stewed chicken, cut up
- 1 sprig parsley
- 1/2 c. chopped celery with leaves
- 1 medium onion, sliced
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 or 2 medium carrots, sliced
Directions

1Remove any excess pieces of fat from chicken.

2Place chicken, giblets and neck in a skillet.

3Add just enough water to cover. Add remaining ingredients.

4Heat to boiling; reduce heat.

5Cover and simmer until thickest pieces are tender, about 2 1/2 to 3 1/2 hours.
