Sticky Caramelized Pork

- 3 oz palm sugar, grated, or 1/3 cup packed brown sugar
- 1 large onion, thinly sliced
- 1 None long red chili pepper, finely chopped
- 1 tbsp finely grated ginger
- 1 tbsp finely grated orange peel
- 1 2/3 lbs pork shoulder, cut into 3/4-inch cubes
- 2 tbsp kecap manis (thick sweet soy sauce)
- 2 tsp fish sauce
- 1/3 cup peanuts, coarsely chopped
- None None Steamed rice and broccoli, to serve
Directions

1Heat a wok or large skillet on medium-high heat. Add palm sugar and 1 cup water; stir until sugar has dissolved.

2Add onion, chili pepper, ginger and orange peel and boil for 2-3 mins. Add pork, kecap manis and fish sauce, stir well and bring to a boil. Reduce heat to low; cover and simmer for 10 mins.

3Remove the lid and simmer for 20 mins, stirring occasionally, until the pork is tender.

4Sprinkle with peanuts and serve with rice and broccoli.
