  • 3/4 cup tomato sauce or ketchup
  • 1/3 cup sweet chili sauce
  • 1/3 cup char siu sauce
  • 2 cloves garlic, minced
  • 2 tsp finely grated fresh ginger
  • 1 tbsp sesame oil
  • 4 1/2 lb chicken pieces
  • 2 tsp sesame seeds, lightly toasted
  • 1 cup fresh cilantro leaves, roughly torn
  • 4 None spring onions, thinly sliced

Directions

    Preheat oven to 400°F. Combine tomato sauce, chili sauce, char siu sauce, garlic, ginger and sesame oil in a large bowl. Reserve 1/3 cup. Add chicken to marinade in bowl and mix to coat chicken. Cover with plastic wrap and chill for at least 30 mins to marinate.

    Line a large roasting pan with baking paper. Arrange chicken, in a single layer, in prepared pan. Bake, basting chicken with reserved marinade and turning occasionally, for 35-40 mins, or until glazed and cooked through. Remove from oven.

    Combine sesame seeds, cilantro leaves and onions in a small bowl. Sprinkle over chicken to serve.
