- 5 oz pitted dried dates
- 1 tsp baking soda
- 4 tbsp butter, chopped
- 1/2 cup firmly packed brown sugar
- 2 None eggs
- 1 cup self-rising flour, plus 2 tbsp
- 1 tsp ground ginger
- None None Butterscotch Sauce
- 1 1/4 cups half-and-half
- 3/4 cup firmly packed brown sugar
- 5 1/2 tbsp butter, chopped
Directions

1Preheat oven to 400°F. Grease a deep 8 inch-round cake pan and line base with baking paper.

2Combine dates, baking soda and 1 cup boiling water in a food processor. Let stand for 5 mins then add butter and sugar. Process until almost smooth. Add eggs, flour and ginger and process until combined. Transfer to prepared pan and bake for 45 mins. Let stand in pan for 10 mins then invert onto a serving plate.

3Meanwhile, for the butterscotch sauce, combine all ingredients in a medium saucepan. Stir over low heat until smooth. Serve pudding warm with sauce.
