- 2 lb. sharp cheddar cheese
- 1 lb. monterey jack cheese
- 1 can (4 oz.) whole green chilies
- 1 jar (4 oz.) pimentos
- 14 cloves fresh garlic
- 1/2 cup dried minced onion
- 1/8 tsp. ground pepper
- Garlic powder
- 3/4 cup real mayonnaise
- 1 cup water (approximately)
Directions

1Grate all cheese into shallow pan or mixing bowl.

2Dice chili pepper and pimentos and sprinkle over grated cheese.

3Press garlic cloves, adding both juice and pulp to cheese.

4Add minced onion and pepper.

5Generously sprinkle powdered garlic over all.

6Thoroughly mix together; add mayonnaise and blend, adding water as needed to attain a smooth mixture.

7Store in airtight container for at least 2 days before using.
