  • 1 pound boneless beef, preferably sirloin, cut into 1/2-inch slices across the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine, dry sherry, stock, or water
  • 1 teaspoon sugar
  • 2 tablespoons corn, grapeseed, or other neutral oil
  • 2 garlic cloves, minced
  • One 1 1/2-inch piece fresh ginger, peeled and minced
  • 1 small onion, sliced
  • 3 tablespoons curry powder, preferably homemade (pages 592593)
  • Chopped fresh cilantro leaves for garnish

    Mix the beef with the soy sauce, wine, and sugar.

    Set aside.

    Heat the oil in a skillet with a lid over medium-high heat.

    Add the garlic, ginger, and onion and cook until the onion is softened, about 5 minutes.

    Stir in the curry powder and cook until fragrant, about 30 seconds.

    Add the beef and cook, stirring occasionally, until browned.

    Add 1/4 cup water to the skillet and continue to cook, stirring occasionally, for another 2 minutes or so.
