- 2 whole Large Russet Potatoes - Boiled And Peeled
- 1 teaspoon Salt
- 1/2 teaspoons Black Pepper, Ground
- 1 teaspoon Fresh Thyme, Finely Chopped
- 1 cup All Purpose Flour/ Wheat Flour
- 1 teaspoon Olive Oil Or Butter
- 2 Tablespoons Olive Oil/butter
- 1 whole Medium Sized Onion, Cut In Half Then Thinly Sliced
- 1/4 cups Cabbage, Cut Into Thin Strips
- 1/2 teaspoons Salt
- 1/4 teaspoons Black Pepper, Ground
- 1 teaspoon Sriracha Sauce/ Hot Sauce
- 1- 1/2 Tablespoon Light Soya Sauce
- 2 Tablespoons Tomato Ketchup/ Tomato Paste
- 1 teaspoon White Vinegar

1For the gnocchi:

3Using a grater, grate the boiled and peeled potatoes into thin fine strands.

4Put the potatoes into a bowl.

6Now add the salt, pepper and chopped thyme and gently combine into the potato shreds using a fork.

8Now slowly add flour (1 tablespoon at a time) into the potato mixture and with a soft hand start kneading the dough.

9Add only enough flour until a soft but firm dough consistency is reached.

11Divide the dough into 4 portions.

12Take each portion and using both hands, roll the dough into a thin long rope (about 1/2 inch diameter).

13Using a sharp knife, cut the rope into 1/2 inch pieces.

14Roll each 1/2-inch sized piece between your palms to form ball shape.

15Repeat the process with all the sections of dough.

16Sprinkle some flour over the formed balls to prevent them from sticking to each other.

18Now, take a big pot and fill it 3/4 of the way full with water.

19Put it over a high flame and let it come to a boil.

20Once the water starts to boil, add the butter or olive oil and gently add some gnocchi dough balls into the water (dont crowd the pot).

26While the gnocchi balls are cooking, take a separate large saute pan and heat it over medium-high heat.

27Add the olive oil/butter and let it heat up.

28Now add the sliced onion and cabbage and saute on medium high flame.

29Keep tossing to avoid the vegetables from burning.

30Once the vegetables are slightly brownish on the edges, bring down the flame to low heat.

32Add the cooked gnocchi into the saute pan and bring the heat to medium-high to stir fry.

34Sprinkle in salt and pepper and let the gnocchi balls stir fry to get a little crunch on the surface.

36Then add in the Sriracha sauce, soy sauce, tomato paste and vinegar and gently toss with the gnocchi to combine.

38Then your stir-fried gnocchi is ready to be served!
