Stir-fried Green Eggplants

- 250 g green eggplant
- 1 medium size red onion
- 2 green chilies
- 1/2 teaspoon turmeric
- 1/4 teaspoon red chill powder
- 1 tablespoon coriander powder
- 1 teaspoon cumin seeds
- to taste salt
- 2 tablespoons cooking oil
Directions

1In heavy base frying pan add oil.

2Let the oil heat.

3Add cumin seeds.

4Once they start to splutter add finally chopped onion.

5Once the onion is golden brown add all the ingredients except eggplant.

6Stir it for two minutes and add finally sliced green eggplants.

7Now cook it without covering it on lower heat.

8Make sure that you do whole cooking on medium heat.

9Once the oil starts to separate that means the dish is ready.

10Stir it gently.
