- 1 c. rice
- 1 medium onion
- 1/2 bell pepper
- 1 stalk celery
- 2 carrots
- 1 chicken
- 4 Tbsp. oil
- salt to taste
Directions

1Brown rice in 2 tablespoons oil.

2Cook rice in 1 cup water after browning.

3Cook chicken.

4In 2 tablespoons oil saute sliced onion, sliced pepper, diced celery and sliced carrot.

5Remove chicken from bone and add to vegetables.

6Stir in rice.

7Simmer 15 to 20 minutes.

8Serve.
