  • 1 cup butter chopped, at room temperature
  • 2/3 cup granulated sugar
  • 4 eggs
  • 1 cup all purpose flour sifted
  • 3/4 cup self-rising flour sifted
  • 1/2 cup ground almonds
  • 1/2 cup milk
  • 9 ounces strawberries hulled, chopped
  • 1 cup walnuts chopped
  • 1/4 cup strawberry jam
  • 9 ounces strawberries hulled, sliced
  • 1 1/4 cups heavy cream whipped
  • 1/4 cup walnuts finely chopped
  • powdered sugar for dusting

    Preheat oven to 325°F. Lightly grease and line a 9 1/2 inch round cake pan with parchment paper.

    Cream butter and sugar until pale and creamy. Beat in eggs, 1 at a time, beating well after each addition. Fold in flour, almonds and milk until just combined then gently stir in strawberries and walnuts. Transfer to prepared pan and bake for 1 hour 45 mins-2 hours, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then turn out onto a wire rack to cool completely.

    Using a large, serrated knife, cut cake in half horizontally. Spread jam over bottom 1/2 of cake then arrange 1/2 of the strawberries and 1/2 of the whipped cream over top. Top with remaining cake 1/2 and spread remaining whipped cream over top. Sprinkle with remaining strawberries and walnuts. Dust with powdered sugar.
