Strawberry Jam

- 1 box fruit pectin for jams and jellies with less sugar
- 3 1/4 c. sugar, divided
- 4 c. crushed strawberries (buy 2 qt. fully ripe strawberries)
Directions

1Mix fruit pectin and 1/4 cup of the sugar in a small bowl. Stir fruit pectin mixture into strawberries gradually.

2Let stand 30 minutes; stir occasionally.

3Stir remaining sugar gradually into strawberry mixture.

4Stir constantly until sugar is completely dissolved and no longer grainy, about 3 minutes (a few sugar crystals may remain).

5Pour into plastic containers to within 1/2-inch of tops; cover.

6Let stand at room temperature 24 hours.

7Jam is now ready to use.

8Store in refrigerator or freeze extra containers.

9Makes six 1-cup containers.
