  • 8 c. whole strawberries
  • 5 c. sugar
  • 2 Tbsp. lemon juice

    Mash berries in large pan.

    Add sugar and lemon juice.

    Heat to boiling over high heat, stirring constantly.

    Boil, stirring, until translucent and jam is thick, about 30 minutes.

    It will boil and pop; skim off foam quickly.

    Immediately pour into hot, sterilized jars, leaving headspace.

    Wipe off rims and seal. Makes 5 jars.
