  • 1 cup long grain rice
  • 2 cup steaming hot water
  • 1 tbsp olive oil, extra virgin
  • 2 tbsp minced garlic
  • 2 cup chicken broth
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 1/2 bunch cilantro, minced
  • 2 medium-large tomatoes, chopped
  • tsp salt

Directions

    Heat water, pour over rice in a heat proof bowl, and let rest for 20 minutes.

    Heat oil and garlic in a pan.
  3. 3
    Add drained and rinsed rice.

    And suate a little before adding the pepper & salt.

    Pour in broth and bring to a simmer, cover and reduce heat.

    After about 20 minutes, uncover add butter and stir.

    Mix in fresh cilantro and tomatoes
