Strawberry Mousse

  • 1/2 cup apple cider or juice
  • 1 Tbs. agar-agar flakes
  • 12.3-oz. pkg. soft silken tofu
  • 3 cups hulled strawberries
  • 3 Tbs. honey
  • 1 tsp. vanilla extract

Directions

    In small saucepan, bring cider to a simmer over low heat.

    Add agar-agar; stir until dissolved, about 5 minutes.

    In food processor, combine cider mixture, tofu, strawberries, honey and vanilla.

    Process until almost smooth.

    Pour into dessert dishes.

    Chill at least 1 hour.
