Strawberry Muffins

Ingredients

  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/3 to 1/2 c. sugar
  • 8 oz. carton strawberry yogurt
  • milk
  • 3 Tbsp. vegetable oil
  • 1 egg, slightly beaten
  • 1/2 to 1 c. strawberries, sliced (optional)

Directions

    Preheat oven to 400°.

    Sift flour, then measure.

    Sift dry ingredients together.

    Pour yogurt into measuring cup and add enough milk to make 1 cup.

    Combine yogurt, oil and egg with dry ingredients.

    (Batter should be lumpy.)

    Add strawberries, if desired.

    Fill muffin cups 2/3 full.

    Bake at 400° for 20 to 25 minutes or until golden brown.

    Makes 12 medium muffins.
