Ingredients

  • 1 c. margarine
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. lemon extract
  • 4 eggs
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • 1 c. strawberry preserves
  • 1/2 c. sour cream
  • 1 c. chopped walnuts or pecans

    Cream margarine, sugar, vanilla and lemon extract until fluffy.

    Add eggs, one at a time, beating well after each addition.

    Sift together flour, salt, cream of tartar and baking soda.

    Combine preserves and sour cream.

    Add this to dry ingredients alternately with creamed mixture, beating well after each addition.

    Stir in nuts.

    Pour into greased and floured loaf pans (5 small or 2 large pans).

    Bake at 350° for 50 to 55 minutes.

    Remove from pans; cool on wire racks.
