Strawberry Pecan Bread

Ingredients
- 2 eggs
- 1 c. granulated sugar
- 1/2 c. cooking oil
- 1 1/2 c. flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 (10 oz.) pkg. frozen sliced strawberries, partially thawed
- 1 1/2 c. coarsely chopped pecans or walnuts
Directions

1In a mixer bowl, beat eggs.

2Add sugar and oil.

3Beat until well combined.

4Add flour, cinnamon, baking soda and salt.

5Beat until well blended (batter should be thick).

6Stir in partially thawed, undrained berries and nuts.

7Pour batter into a greased 9 x 5 x 3-inch loaf pan or two 7 1/2 x 3 1/2 x 2-inch loaf pans. Bake in 350° oven for 55 to 65 minutes, or until toothpick inserted in the middle comes out clean.

8Let cool in pan for 10 minutes.

9Remove and cool on wire rack.

10Freezes well.

11I usually double recipe.
