Strawberry Preserves

Ingredients

  • 3 (10 oz.) pkg. frozen strawberries
  • 1/4 c. water
  • 1 (1 3/4 oz.) pkg. Sure-Jell
  • 6 c. sugar
  • 1/3 c. rum (Grand Marnier, Kirsch, Cointreau or Triple Sec can be substituted)
  • 3 Tbsp. fresh lemon juice

Directions

    Combine the first 3 ingredients in kettle; bring to a boil and, stirring, boil 1 minute.

    Stir in sugar and bring to a boil that can't be stirred down.

    Boil hard for 1 minute.

    Remove mixture from heat; stir in rum and lemon juice.

    Let stand 5 minutes.

    Skim off foam and pour into hot, sterilized jars.

    Seal. Yields 3 pints.
