"Stretcher" Oyster Stew

Ingredients

  • 2 c. finely diced potatoes
  • 1 c. water
  • 2 tsp. salt
  • 1 pt. oysters, drained and coarsely cut or chopped
  • 1 pt. oyster liquid, add milk to make 1 pt.
  • 1/3 c. butter or regular margarine
  • 1 c. light cream or dairy half and half
  • 1/8 tsp. pepper
  • 1/4 tsp. paprika

Directions

    Cook potatoes in water with salt added until almost soft, about 10 minutes.

    Add oysters and liquid. Bring just to a boil. Remove from heat at once. Add butter, cream and seasonings.

    Cover and let stand about 15 minutes before serving. Makes 5 to 6 servings.
