String Bean Fries

  • 500 g runner beans, halved
  • 4 tbsp flour
  • 150 g breadcrumbs
  • 3 None eggs
  • 1 litre oil for deep frying

Directions

    Cook the beans in boiling salted water for 5 mins. Drain them and rinse them in cold water.
  2. 2
    Put the flour and breadcrumbs on separate plates and beat the eggs. Dip the beans one at a time, first in the flour, then in the egg and finally in the breadcrumbs. Fry them in batches in hot oil for about 2 mins until golden brown. Lift them out with a slotted spoon and drain them on paper towels.
