- 1/2 packet pie crust mix
- 8 egg yolks, slightly beaten
- 1 c. sugar
- 1 envelope unflavored gelatin
- 1/2 c. water
- 1 Tbsp. grated lemon peel
- 1/2 c. lemon juice
- 1/4 tsp. salt
- 1/4 tsp. cream of tartar
- 1 c. sugar
Directions

1Prepare 9-inch baked pie shell as directed on package.

2In saucepan, mix egg yolks, 1 cup sugar, gelatin, water, lemon peel, lemon juice and salt.

3Cook over medium heat, stirring constantly just until mixture boils.

4Chill in refrigerator, stirring occasionally, until mixture mounds slightly when dropped from spoon.

5Beat egg whites and cream of tartar until foamy.

6Beat in 1 cup sugar, 1 tablespoon at a time.

7Continue beating until stiff and glossy.

8Fold in lemon mixture.

9Pile into baked pie shell. Chill several hours or until set.
