- 2 lb. string beans
- 2 oz. butter
- 2 oz. grated cheese
- 2 eggs
- 1 onion (small)
- 3 oz. heavy cream
- salt and pepper as desired
- dash of nutmeg
Directions

1Wash and boil cleaned string beans in a pot with about 4 quarts of water and salt for about 15 minutes until tender, but not completely done.

2Drain in a colander.

3Combine 1 ounce of butter and chopped onion in a pan.

4Heat for about 2 minutes, without browning, then add beans, pepper and nutmeg.

5Stir for 2 more minutes and pour in a buttered baking pan.

6Beat eggs slightly and blend in cream and grated cheese.

7Pour mixture over beans and bake until gratin is formed.

8Serves 6 persons.
